Spaghetti Carbonara is an Italian classic that combines the creamy richness of eggs and cheese with the savory flavor of pancetta. It’s a pure comfort dish that everyone will enjoy.
Ingredients
- 200g spaghetti
- 100g pancetta, diced
- 2 large eggs
- 50g Parmesan cheese, grated
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh parsley, chopped (optional)
Instructions
- 1. Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente, then drain, reserving 1 cup of the pasta water.
- 2. In a large pan, heat the olive oil over medium heat. Add the pancetta and cook until it’s crispy, about 5-6 minutes. Stir in the minced garlic and cook for another minute.
- 3. In a bowl, whisk together the eggs and grated Parmesan cheese until smooth. Season with a pinch of salt and pepper.
- 4. Add the cooked spaghetti to the pan with the pancetta and garlic, tossing to combine. Remove the pan from the heat and immediately pour in the egg mixture, tossing quickly to coat the spaghetti. Add a little reserved pasta water if the sauce is too thick.
- 5. Serve immediately, garnished with freshly cracked black pepper and chopped parsley, if desired.
Notes
For a vegetarian version, simply omit the pancetta and add extra cheese for flavor.
