Easy Chicken and Dumplings

This comforting dish combines the heartiness of tender chicken pieces with fluffy dumplings, simmered to perfection in a savory broth. Perfect for a cozy evening meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons butter, melted
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. 1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery, cooking until the vegetables are softened, about 5 minutes.
  2. 2. Pour in the chicken broth and bring to a boil. Add in the shredded chicken, salt, and pepper. Reduce heat and let it simmer while you prepare the dumplings.
  3. 3. In a mixing bowl, whisk together the flour, baking powder, and salt. Stir in the milk and melted butter until the mixture becomes a soft dough.
  4. 4. Drop spoonfuls of the dough into the simmering broth. Cover the pot and let the dumplings cook for 15 minutes without lifting the lid.
  5. 5. Once the dumplings are cooked through, stir gently. Garnish with fresh parsley if desired. Serve warm.
