Leftover Turkey Stoup

Transform your leftover turkey into a heartwarming stoup, a delightful blend of soup and stew, perfect for cozy evenings. This stoup is packed with flavor and warmth, making it an ideal comfort dish.

Ingredients

  • 2 cups cooked turkey, shredded
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup potatoes, diced
  • 1 can (14 oz) diced tomatoes, with juice
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 1/2 cup frozen peas
  • Fresh parsley for garnish

Instructions

  1. 1. In a large pot, heat olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  2. 2. Add minced garlic, sliced carrots, and celery, and cook for another 3 minutes, stirring occasionally.
  3. 3. Stir in the diced potatoes and add the shredded turkey to the pot.
  4. 4. Pour in the can of diced tomatoes with juice and the chicken broth.
  5. 5. Add dried thyme, salt, black pepper, and bay leaf. Stir well to combine.
  6. 6. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes, or until the vegetables are tender.
  7. 7. In the last 5 minutes of cooking, stir in the frozen peas.
  8. 8. Remove the bay leaf before serving. Garnish with fresh parsley.

Notes

This stoup is a versatile dish—feel free to add other vegetables like corn or bell peppers, depending on what you have on hand.
