Ingredients
- 2 cups cooked turkey, shredded
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 cup potatoes, diced
- 1 can (14 oz) diced tomatoes, with juice
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 1/2 cup frozen peas
- Fresh parsley for garnish
Instructions
- 1. In a large pot, heat olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- 2. Add minced garlic, sliced carrots, and celery, and cook for another 3 minutes, stirring occasionally.
- 3. Stir in the diced potatoes and add the shredded turkey to the pot.
- 4. Pour in the can of diced tomatoes with juice and the chicken broth.
- 5. Add dried thyme, salt, black pepper, and bay leaf. Stir well to combine.
- 6. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes, or until the vegetables are tender.
- 7. In the last 5 minutes of cooking, stir in the frozen peas.
