The One-Bowl Do Nothing Cake is the perfect dessert for those who love simplicity and comfort. With its moist texture and delicious topping, it’s a classic treat that requires minimal effort.

Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 can (20 oz) crushed pineapple with juice
  • 1 cup chopped pecans
  • 1/2 cup unsalted butter
  • 1 cup sweetened shredded coconut
  • 3/4 cup evaporated milk
  • 1 teaspoon vanilla extract (for topping)

Instructions

  1. 1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. 2. In a large mixing bowl, combine the flour, sugar, baking soda, and salt.
  3. 3. Add the eggs, 1 teaspoon of vanilla extract, and the entire can of crushed pineapple with its juice to the dry ingredients.
  4. 4. Mix everything together until well combined and pour the batter into the prepared baking dish.
  5. 5. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. 6. While the cake is baking, prepare the topping by combining the butter, evaporated milk, coconut, and the remaining teaspoon of vanilla extract in a saucepan over medium heat.
  7. 7. Bring the mixture to a boil and let it simmer for a few minutes, stirring constantly.
  8. 8. Once the cake is done, remove it from the oven and immediately pour the hot coconut mixture over the top, spreading it evenly.

This cake is best enjoyed a day after baking, as it allows the flavors to deepen and the topping to soak into the cake.
