- 1 cup chopped pecans
- 1/2 cup unsalted butter
- 1 cup sweetened shredded coconut
- 3/4 cup evaporated milk

- 4. Mix everything together until well combined and pour the batter into the prepared baking dish.
- 5. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- 6. While the cake is baking, prepare the topping by combining the butter, evaporated milk, coconut, and the remaining teaspoon of vanilla extract in a saucepan over medium heat.
- 7. Bring the mixture to a boil and let it simmer for a few minutes, stirring constantly.
- 8. Once the cake is done, remove it from the oven and immediately pour the hot coconut mixture over the top, spreading it evenly.
- 9. Allow the cake to cool before serving to let the flavors meld.
Notes
This cake is best enjoyed a day after baking, as it allows the flavors to deepen and the topping to soak into the cake.
