This comforting White Chicken Chili is a cozy meal that’s perfect for any chilly day. With tender chicken and white beans, this dish is both hearty and satisfying.
Ingredients
- 500g boneless, skinless chicken breasts
- 400g canned white beans (such as cannellini or great northern), drained and rinsed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 2 cups chicken broth
- 1 cup full-fat sour cream
- 100g canned green chilies
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- Salt to taste
- Freshly ground black pepper to taste
- Fresh cilantro for garnish (optional)
- Lime wedges for serving (optional)
Instructions
- 1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until the onion becomes translucent, about 5 minutes.
- 2. Add the chicken breasts to the pot. Sear each side for 2-3 minutes until lightly browned.
- 3. Pour in the chicken broth and add the canned green chilies, cumin, oregano, cayenne pepper, salt, and black pepper. Stir well.
- 4. Bring the mixture to a simmer, cover the pot, and cook for 20 minutes, or until the chicken is cooked through.
- 5. Remove the chicken from the pot and shred it using two forks.
- 6. Return the shredded chicken to the pot, and stir in the white beans. Simmer the chili for another 5-10 minutes, allowing the flavors to meld.
- 7. Reduce the heat to low and gently stir in the sour cream until well combined.
- 8. Serve the chili hot, garnished with fresh cilantro and lime wedges if desired.
