White Chicken Chili

This comforting White Chicken Chili is a cozy meal that’s perfect for any chilly day. With tender chicken and white beans, this dish is both hearty and satisfying.

Ingredients

  • 500g boneless, skinless chicken breasts
  • 400g canned white beans (such as cannellini or great northern), drained and rinsed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 cups chicken broth
  • 1 cup full-fat sour cream
  • 100g canned green chilies
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
  • Freshly ground black pepper to taste
  • Fresh cilantro for garnish (optional)
  • Lime wedges for serving (optional)

Instructions

  1. 1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until the onion becomes translucent, about 5 minutes.
  2. 2. Add the chicken breasts to the pot. Sear each side for 2-3 minutes until lightly browned.
  3. 3. Pour in the chicken broth and add the canned green chilies, cumin, oregano, cayenne pepper, salt, and black pepper. Stir well.
  4. 4. Bring the mixture to a simmer, cover the pot, and cook for 20 minutes, or until the chicken is cooked through.
  5. 5. Remove the chicken from the pot and shred it using two forks.
  6. 6. Return the shredded chicken to the pot, and stir in the white beans. Simmer the chili for another 5-10 minutes, allowing the flavors to meld.
  7. 7. Reduce the heat to low and gently stir in the sour cream until well combined.
  8. 8. Serve the chili hot, garnished with fresh cilantro and lime wedges if desired.

Notes

For an added layer of flavor, you can top your chili with sliced avocado or a sprinkle of Monterey Jack cheese.
