Ingredients

  • 200ml milk
  • 3 large eggs
  • 125g all-purpose flour
  • Pinch of salt
  • 2 tbsp vegetable oil or beef dripping

Instructions

  1. 1. Preheat your oven to 220°C (425°F).
  2. 2. In a mixing bowl, whisk together the milk and eggs until well combined.
  3. 3. Gradually add the flour and a pinch of salt to the egg mixture, whisking continuously to form a smooth batter.
  4. 4. Let the batter rest for 10 minutes.
  5. 5. Place a small amount of vegetable oil or beef dripping into each cup of a muffin tin. Heat the tin in the oven for about 5 minutes or until the oil is smoking hot.
  6. 6. Carefully remove the muffin tin from the oven and quickly pour the batter into the hot oil, filling each muffin cup about halfway.
  7. 7. Return the tin to the oven and bake for 20–25 minutes or until the puddings are puffed up and golden brown.
  8. 8. Serve immediately with a roast or your favorite Sunday dinner.

Notes

For a crisper texture, make sure the oil is piping hot before adding the batter.
